Cashew Butter Cookies

A twist on the classic peanut butter, these are made with almond flour. They are less sweet, and delightfully nutty and smooth. And because we need a little frosting in our lives, a delicious sugar-free option to top your bake, too!

Ingredients
  

Cookies

  • 6 tbs cashew butter
  • 1/4 cup granulated monk fruit
  • 2 tbs butter
  • 1 egg
  • 6 tbs almond flour
  • 1/4 tsp baking powder

Frosting

  • 3 tbs butter, softened
  • 1 cup powdered monk fruit
  • 1/2 tbs almond milk
  • 1/4 tsp vanilla

Instructions
 

For the cookies

  • Preheat oven to 350'F
  • Combine all ingredients in a bowl and mix until well combined.
  • Roll into 1-1.5" balls and black on a cookie sheet lined with parchment paper.
  • Bake for 18-20 minutes and allow to cool completely. They will be super soft at first.

For the frosting

  • Use a hand mixer to cream the butter, then slowly add the powdered monk fruit until it's all fully incorporated.
  • Mix in vanilla.
  • Slowly add milk until desired consistency is reached.
  • Spread over cooled cookies.
