Pecan Bars

An easier spin on the classic pecan pie. Just as flavorful, with a fraction of the sugar. You'll want to make these all year long.

Ingredients
  

Crust

  • 3/4 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated monk fruit
  • 4 tbs butter

Pecan Layer

  • 4 tbs butter
  • 1/2 cup granulated monk fruit
  • 2 tbs honey
  • 2 cups chopped pecans
  • 1/2 tsp vanilla
  • 1/4 tsp corn starch

Instructions
 

Crust

  • Preheat oven to 350'F.
  • Mix the dry ingredients for the crust in a bowl.
  • Rub in butter until the mixture turns crumbly.
  • Press into the bottom of an 8x11 baking ish.
  • Bake for 12-15 minutes. Take out and set aside.

Pecan Layer

  • Melt butter, monk fruit, honey, and vanilla in a saucepan.
  • Stir in chopped pecans and corn starch. Pour immediately over crust.
  • Return to the oven for 10 minutes.
  • Cool completely before slicing into bars. Store in the fridge for a week.
